brownie cookies

Brownies, cookies, salted caramel? My mouth is watering. Baker's Royale threw it all together to make this decadent dessert. I feel a cheat day coming up...

Brownie Cookie Ingredients
  • 12 oz. chocolate, chopped
  • 3 tablespoons butter
  • 2 eggs
  • ⅔ cup sugar
  • 1 teaspoon vanilla extract
  • ¼ cup all-purpose flour, sifted
  • ¼ teaspoon baking powder, sifted

Salted Caramel Creme Filling :
  • 1 cup butter
  • 2 cups confectioner sugar
  • 1/4 teaspoon salted
  • 1/4 cup caramel (Make sure caramel is cooled if making homemade. Click here for homemade caramel sauce recipe)

Instructions:To make brownie cookies:
  1. Heat oven to 350 degrees. Line bake sheet with parchment paper.
  2. Place 7oz. of the chocolate and the butter in a saucepan over low heat and gently stir until melted and smooth. Set aside.
  3. Place the eggs, sugar and vanilla in the bowl of a stand mixer fitted with a paddle attachment and beat for 15 minutes or until pale and creamy. Add in flour, baking powder, melted chocolate mixture, remaining 5 oz. of chocolate and mix to combine. Set aside to to stand for 10 minutes. Spoon 2 tablespoonful of the mixture, onto parchment lined bake sheet. Bake for about 8–10 minutes or until puffed and cracked. Allow to cool completely on trays.
To make caramel creme filling:
  1. Place butter in a bowl and beat until creamed. Add in confectioner sugar and salt and beat until light combined. Add in caramel and beat until combined.
  1. Spread a teaspoon and a half of caramel creme on underside of one brownie cookie and place a second brownie cookie bottom side down on top frosting.

Makes 24 one-and-a-half inch sandwich cookies.

I was so happy to spend the day with Boyfriend yesterday at Warped Tour. It went by way too quickly, but it was a fun, hot, loud, sweaty day. I can't wait to see him again.

I read this the other day and it hit home for me. In a good way.

Sometimes we get settled into a lifestyle and we get comfortable with the people surrounding us. It's what we're used to. Consistency brings ease. Change brings discomfort. It's normal.

Yet, there are those times we want a change, whether it's getting a haircut or moving across the country. Maybe we want to change ourselves. Whatever it is, fear usually goes hand-in-hand. But why? I think a  lot of the time the scariest part of changing is how others will perceive us.

I say screw that.

Do what makes you happy. Do what you want. Stop doing what you don't want.

Recently I decided to change up my lifestyle a little. I stopped going out and partying. I didn't want to be the "party girl" at the age of twenty-four. Sure, they say you're only young once, but there are a hell of a lot more ways to live. I'd rather wake up remembering them.

There's more money in my pocket. Less weight on my body. I'm focused on my education and career. I found out who my drinking buddies are and who my true pals are. I grew up. In no way is this meant to be pretentious. In fact, I think I can be pretty lame sometimes. I'm a granny and I'm cool with it, and a granny can still enjoy a good ol' Blue Moon every once in a while.

The point is, you don't have to stay doing what you're doing. You can switch it up a bit. Don't be scared of what people are going to say or whether they're going to stick around. Make choices for you.


what i'm lovin' wednesday

1. As You Wish
I haven't painted pottery at this place in years upon years. It was fun going with my gal pal and being a kid again. Now we have some nice coffee mugs.

2. Oatmeal
This bowl of breakfast has quickly become a favorite, especially with fresh fruit and a little brown sugar. Yum.

3. Warped Tour
I'm heading to this musical extravaganza tomorrow to see Boyfriend. He's only home for the day, so I'm going to soak up every minute before he takes off to the next city.


diy: stars & stripes shorts

Fourth of July is just around the corner so slap on something patriotic and celebrate. Here is a fun DIY from BLDG 25 for some red, white, and blue shorts.

What you need: painters tape, fabric stencil spray paint, some foam brushes, star stencil and a piece of scrap cardboard. You can get all of the above supplies at Joann's or Hobby Lobby, or any other craft store.

When using the star stencil, make sure the stencil is as flat on the denim as possible – to do this put some double sided tape on the back to help adhere it to the shorts before you spray. The foam brushes also come in handy to help spread the paint evenly. Use a tiny paintbrush to help touch up the stars. 

For the stripes, you can choose to do vertical or horizontal. Using the painters tape, simply make thick stripes from top to bottom or side to side, leaving open the areas that will be painted red. Spray away!
When you’re finished, remove the tape and let the shorts dry. Leave in sun for quicker results.

mexican corn salad

I'm a sucker for Mexican food, so finding healthy recipes that have a little Me-hee-co flair is always a treat. This sweet corn is covered in a lime mayo, chili powder, and cojita cheese. YUM! Thank you, Skinny Taste for getting my taste buds buzzing.

  • 4 large fresh cobs of corn
  • 2 tbsp light mayonnaise
  • 2 tbsp fat-free Greek yogurt
  • 1/2 tsp chili powder (more or less to taste)
  • 1 tbsp fresh lime juice (from half a lime)
  • 1 tbsp minced cilantro
  • 2 tbsp scallions, minced
  • 1/2 cup (40 g) cotija cheese, grated
  • 5 lime wedges for serving


Boil corn in boiling water for 5 minutes, remove from heat. When cool enough to handle, cut corn off the cobb. (makes 4 cups)

With boyfriend gone these inventions make everything easier. Well, at least a little.

I've been wearing so many skirts lately. It's so hot out and they are a nice alternative to shorts, even though I do like me a nice pair of high-waisted denim. I have a good collection, but it's always fun to look around a bit.

stray pup

I found a little pup running in the street by my apartment yesterday so naturally, being the crazy lady I am, I flew out of my car to grab him. After some coaxing he finally came home with me. After a bath, he quickly made himself at home and became friends with my Charlie girl. I'm definitely smitten (as you can see above) with the little guy, but I hope his rightful owner sees my "Found Dog" posters and claims him. Crossing fingers.
