Noodles. Those addicting little boogers that we smother with our favorite sauces and fill our tummies up with until we are unbuttoning our pants to breathe. They are a weakness of mine, but are so jam-packed with calories and carbs that they aren't on the menu every week. I've tried the whole wheat options, but I still feel so full.

When I saw that House Foods Tofu Shirataki had noodle substitutes of all sizes, I jumped for joy. Literally. This pasta substitute has ten times less calories than typical pasta. Halleluiah! Finally, eating Italian without the guilt.

The tofu noodles are best in cream-based sauces or Asian dishes. So, of course, my favorite Hungry Girl provided a mac 'n' cheese recipe...

Three-Cheesy Tofu Shirataki Mac

1 bag House Foods Tofu Shirataki Macaroni Shaped Noodle Substitute
1 wedge The Laughing Cow Light Creamy Swiss cheese
1 slice fat-free American cheese
1 tsp. reduced-fat Parmesan-style grated topping
Dash each salt and black pepper, or more to taste

Use a strainer to rinse and drain noodles well. Pat dry. In a microwave-safe bowl, microwave noodles for 1 minute.

Drain excess liquid. Dry thoroughly with paper towels.

Add cheese wedge and cheese slice, breaking both into pieces as you add them. Microwave for 1 minute.

Add remaining ingredients and stir very well.

(110 calories, 3g fat, 685mg sodium, 10g carbs, 4g fiber, 2g sugars, 8g protein)

  1. This looks really good! I love finding pasta substitutes :) I love kelp noodles too, I boil them to soften them a bit. This week I made a sesame noodle recipe from Elana's Pantry, it was so good :)
