foodie fridays


While I'm not vegan, I know a few of my readers are, which is why I decided to attempt a vegan recipe. It's not exactly like cheesecake, but it's pretty darn close. Here is the recipe...

Crust:
1 cup pitted dates
1 cup unsweetened shredded coconut
1 cup cashews
2 tbsp ground flaxseed
1 tsp vanilla

Filling:
1/2 cup cashew butter
2 cups strawberries
1/2 cup blackberries
1 tbsp lemon juice
1 tsp vanilla
4 drops liquid stevia
Sprinkle of Himalayan pink salt

Combine crust ingredients in a food processor. Pulse until crumbly. Firmly press crust into a greased 8x8 pan. Combine filling ingredients in a blender. Blend until smooth. Pour on top of crust in pan. Freeze for two hours. Cut into small squares. Serve right away!

  1. Those look amazing :) I will have to try those soon. I have had such a sweet tooth lately...I should probably cut back on all the ice cream!
