foodie fridays

This is an extremely easy breakfast that is packed with protein and flavor. Try it out next time you want a delicious treat in the morning. I love eating this before or after a great workout.

Cook oatmeal as normal on the stove top.
Mix in egg whites, honey, peanut butter, and a sprinkle of cinnamon.
Yum!

happy thanksgiving

Happy Thanksgiving, everyone! I hope you are enjoying this beautiful day with family, friends, and loved ones while chowing down on some delicious food. Remember that today isn't just about the turkey and stuffing, even though it's so dang tasty. It's about being thankful for your life and the people you share it with.

I'm incredibly thankful for my family, friends, my loving boyfriend, and our adorable pups. I am so blessed to be where I am in life with the people who surround me. Don't get me wrong, I'm thankful every day when I wake up, but today especially just because that's what Thanksgiving is all about.

Okay, now let the food coma commence...

bellami

I'm in la-la-looove with my new extensions from Bellami Hair. I was so excited to open up my package in the mail yesterday. Inside I found the softest, thickest hair, most natural looking clip-in hair extensions. The color was a little light for my newly dyed hair, but I had no problem dying them to match perfectly. I would suggest getting color matched by their extremely helpful staff, which I didn't do. Ooops!

I ordered the Chocolate Brown, 220 gram, 22 inch hair. I dyed them a little darker and the reddish hues came through beautifully to match my hair! I also trimmed them up a little bit. What I love about these extensions is that they are double drawn. What's that mean? It means they are thick and voluminous from top to bottom, unlike those extensions that thin out way too much at the end. I see so many girls looking like they have mullets. Yikes! Besides the quality and thickness of the hair, the clips are extremely comfortable and stay in really well.

If you are looking to add some length and thickness to your hair, I highly suggest the Bellami Hair extensions. They are by far the best extensions I have ever owned. I honestly feel like a mermaid!

My mom and sis make this delicious dish with pancetta. I couldn't find any at the store, so I settled for turkey bacon (not as good as pancetta though). Use olive oil to sauté the garlic, bacon, and brussel sprouts. You won't even need a sauce!

foodie fridays

Apple spice cake with cream cheese frosting? Um, yes please. What better dessert for the upcoming holidays? Food Network definitely hit it on the mark.

Ingredients

1/2 stick butter, plus extra for loaf pan
3 Granny Smith apples, peeled and cored, cut into 1/2-inch dice and tossed with a little lemon juice
1/2 lemon, juiced
1 cup apple cider
1 3/4 cups all-purpose flour, plus extra for loaf pan
1 teaspoon ground cinnamon
1 teaspoon baking soda
3 or 4 grates fresh nutmeg (about 1/2 teaspoon)
3/4 cup brown sugar
3/4 cup sugar
Pinch kosher salt
1 egg
1 teaspoon vanilla extract
1/2 cup toasted and chopped walnuts
1/2 cup golden raisins
Cream Cheese Icing, recipe follows
Special equipment: Standard loaf pan

Directions

Preheat the oven to 350 degrees F.

Melt the butter in a large saute pan over medium heat. Toss in the apples and stir to coat them with the butter. Add the lemon juice and the apple cider. Cook until the apples have softened and the cider has reduced by half. Transfer the mixture to a food processor and pulse into a coarse paste. Reserve.

In a large mixing bowl combine the flour, cinnamon, baking soda, nutmeg, both of the sugars and a pinch of salt. Make a well in the dry ingredients and add the pureed apples, the egg and vanilla. Stir to combine. Toss in the walnuts and raisins.

Butter and flour a loaf pan. Pour the batter into the prepared pan and put it in the preheated oven. Bake until a toothpick, inserted in the center comes out clean, about 40 to 45 minutes.

Remove the pan from the oven and let cool for 10 minutes. Remove the cake from the pan and cool completely.

Cut the cake in half equatorially and spread half of the icing on the bottom layer. Replace the top half and ice the top of the cake, leave the sides bare. Slice and serve.

Cream Cheese Icing:

1 (8-ounce) package cream cheese, at room temperature
1 stick butter, at room temperature
1 cup powdered sugar
1 teaspoon vanilla extract
1/2 lemon, juiced

Beat together all of the ingredients in a stand mixer or with a hand mixer until light and fluffy.

I fell in love with this simple list of things you are always better off without. I came across it on Thought Catalog. What can you do without?

1. Communication with family members who drive you mad.
2. Access to old love letters that it kills you to read.
3. Junk food you’re just going to binge on the night you buy it.
4. Putting your energy into maintaining an image of yourself that is dishonest.
5. Desperately trying to achieve any convention of success that you find banal.
6. Dependence even though its comfortable.
7. People who inadvertently curate your mindset about yourself.
8. Partners who don’t have the same long term vision for the relationship.
9. Getting too settled into your beliefs that you limit yourself to growth.
10. Another shot at the bar because you’re “not feeling it yet.”
11. Doling out disingenuous compliments for the sake of reciprocation or just looking like a nice person.
12. Sex that feeds an impulse but is emotionally damaging in the long term.
13. Entertaining those who just want to irrationally argue without resolve.
14. A religion that doesn’t suit you even if it disappoints other people.
15. Passivity.
16. Things that come very easily; you never appreciate them as much.
17. Excesses of anything material that you don’t need and someone else very well might.
18. Hope for unhealthy things to happen again because you’re attached to them


Basically, let go of anything that now longer serves you, grows you, or makes you happy. Goodbyes aren't scary when they can bring so many good things into your life and your soul.

Who doesn't love a classic pumpkin pie? Well, okay. I know quite a few people, but I'm not one of them. I absolutely love it! Whenever Fall comes around it's like pumpkin this and pumpkin that for me. It makes my insides happy. Cooking Light has a perfect recipe for one that will leave you feeling a little less guilty when you're on your second...or third piece.

Filling:
  • 3/4 cup packed brown sugar
  • 1 3/4 teaspoons pumpkin pie spice
  • 1/4 teaspoon salt
  • 1 (12-ounce) can evaporated low-fat milk
  • 2 large egg whites
  • 1 large egg
  • 1 (15-ounce) can unsweetened pumpkin

Crust:
  • 1/2 (15-ounce) package refrigerated pie dough (such as Pillsbury)
  • Cooking spray
  • Topping:
  • 1/4 cup whipping cream
  • 1 tablespoon amaretto (almond-flavored liqueur)
  • 2 teaspoons powdered sugar 

 

Preparation

  1. Position oven rack to lowest position.
  2. Preheat oven to 425°.
  3. To prepare filling, combine first 6 ingredients in a large bowl, stirring with a whisk. Add pumpkin, and stir with a whisk until smooth.
  4. To prepare crust, roll dough into an 11-inch circle; fit into a 9-inch pie plate coated with cooking spray. Fold edges under and flute.
  5. Pour pumpkin mixture into the crust. Place pie plate on a baking sheet. Place baking sheet on lowest oven rack. Bake at 425° for 10 minutes. Reduce oven temperature to 350° (do not remove pie from oven); bake an additional 50 minutes or until almost set. Cool completely on wire rack.
  6. To prepare topping, beat cream with a mixer at high speed until stiff peaks form. Add the amaretto and powdered sugar, and beat until blended. Serve with pie.

1. Disneyworld
So excited to receive our hopper passes for next month's trip to Disneyworld!

2. Reaching goals
I've been wanting to attempt pullups for awhile, but was always intimidated. I finally just decided to do it and was able to to five! 

3. Roc Race
My friend Tina and I did our first 5k this past weekend, and it was a blast! The Roc Race is full of fun obstacles like the show Wipeout. I plan on doing it again next year!
