There is something about potato salad that just screams summer to me. Maybe it's the BBQ's or the savory taste of something cool, but I love this dish when the temps outside are up.

Food Network has this delicious recipe for a Zesty Potato Salad that sounds out of this world. Nope, not healthy, but all I can say is balance. My main gist that I stand for. Balance healthy foods with indulgences for a happy life. At least it works for me.


Ingredients

For the Mayonnaise:
2 large egg yolks
1/4 cup red wine vinegar
1 tablespoon dijon mustard
Kosher salt
1 1/2 cups neutral-flavored oil (such as vegetable, canola or peanut)
For the Salad:
2 1/2 pounds small red bliss potatoes, quartered
3 cloves garlic, smashed
Kosher salt
6 slices bacon, chopped
2 tablespoons extra-virgin olive oil
1 red onion, diced
3 stalks celery, diced
1/2 cup red wine vinegar
1/2 cup dijon mustard

Directions

Make the mayonnaise: Put the egg yolks in a food processor and add the vinegar, mustard and 1/4 teaspoon salt. Turn on the machine and very slowly start to drizzle in the oil (drip until the mixture starts to look like mayonnaise, then you can start adding it in a slow, steady stream). If the mayonnaise is too thick, add a few drops of water; if it is not thick enough, add a little more oil with the motor running.

Make the salad: Put the potatoes and garlic in a large pot. Add enough water to cover the potatoes by 2 inches and season generously with salt. Bring the water to a boil over high heat, then reduce the heat to medium and simmer until fork-tender, about 10 minutes.

Meanwhile, cook the bacon in the olive oil in a large skillet over medium-high heat, stirring occasionally, until browned and crisp, about 10 minutes. Remove from the heat and stir in the onion, celery and vinegar. Season with salt.

Drain the potatoes and transfer them to a large bowl (discard the garlic). Add the bacon-onion mixture to the hot potatoes and stir to incorporate. Gently stir in 1 1/2 cups mayonnaise and the mustard and season with salt. Refrigerate until cold.

Today is the release of Juice, a book of recipes and tips for living well created by the founders of
Pressed Juicery. I had the opportunity to preview the book and flip through its beautiful pages. It's honestly beautifully done and contains helpful information on juicing and a healthy lifestyle. As someone who is a big fan of the brand and their juices, I highly recommend this book for those wondering about juicing and needing some delicious recipes.

I had the absolute pleasure of interviewing Carly de Castro, one of the founders of Pressed Juicery. This is a company I truly believe in and wholeheartedly support, so this was an exciting opportunity for me. Here is the interview...

What got you so interested in health and nutrition?
Originally, I was in the entertainment industry as a publicist. I found it basically impossible to balance a lifestyle of late night dinners and working events, because I found myself feeling completely drained by the end of each week. I decided to further my education in health, so I enrolled in the Institute for Integrative Nutrition. I loved it and learned about everything from holistic health to macrobiotics. I'd discovered my passion.
 

What are some tips for someone who is just starting out in the juicing world?
If you're just starting out in the juicing world, it's important to understand why juicing is so important and beneficial. If you understand the components of juicing, it's easier to keep up with it. Plus, it makes you feel more empowered and excited! 


What is one of your favorite juices from the book?
Greens 15!
 

What is a piece of advice for someone who wants to begin a healthy lifestyle?
Start! So many people truly want and aspire to be healthy. The trick is to do it, and the book provides the steps to do so.
 

What made you want to turn your success of juices into a book?
Many people have asked me and the other founders of Pressed Juicery why we would put all of our recipes out in the open. Our devotion to the juice is the origin of Pressed Juicery because it is the real secret to a healthy and happy life. But, we believe that this shouldn't be a secret! Everyone should have access to the recipes that changed my life, that way they can change theirs.
 

Are there any juicing myths you'd like to debunk for readers?
Cleansing really has become a hot topic lately. However, it is an extremely common myth that cleansing means fasting or starvation. It doesn't, at all! Cleansing literally means cleaning up your act. It is about getting clean, giving ourselves maximum nutrition, and reducing our dependence on processed foods.
 

What is the philosophy behind Pressed Juicery?
Pressed Juicery really started out as a passion project between myself, Hayden Slater, and Hedi Gores. We realized that juicing had significantly changed all three of our lives. We felt better and looked better, and found negative energy disappearing from our lives. Pressed Juicery was born from our belief that in order for people to find fulfillment and balance each day, they needed a fresh set of tools that are convenient, simple, and tailored to the fast-paced lives we all lead. Juicing meets all of these requirements!
 

Although you live a healthy lifestyle, do you indulge in any guilty (food) pleasures? 
Yes I think it is important to have a balance in your life and an amazing dessert or great wine is a must at times.

  GREENS 15
Triple leafy greens plus triple fruit equals triple threat. Here we add fennel, celery, and cucumber for a super hydrating juice that is not overly sweet.
MAKES 1 TO 2 (8-OUNCE) SERVINGS
3 celery stalks
1 cucumber, peeled
2 kale leaves
2 Swiss chard leaves
12 small fennel bulb
1 Fuji apple
1 pear
1 lemon, peeled
1 bunch fresh parsley

CITRUS 5
One of our original best sell­ers, this apple-lemon-ginger juice is rich in phytonutrients called polyphenols, which prevent blood sugar spikes. The apples have a high fiber content and are rich in pec­tin, a soluble fiber that helps normalize cholesterol, pre­vent cardiovascular disease, and stave off hunger pangs. This is another way to make apple juice into a grown-up favorite.
MAKES 1 TO 2 (8-OUNCE) SERVINGS
1 Fuji apple
1 Granny Smith apple
1 lemon, peeled
12-inch piece fresh ginger, peeled

APPLE, STRAWBERRY, LIME
This juice is a best seller in our shops. We love the tanginess that the lime and strawberries add to the apple juice. During the sum­mertime, we pour this juice into ice-pop molds and keep them in the freezer in our office. Everyone goes nuts for them.
MAKES 1 TO 2 (8-OUNCE) SERVINGS
2 Fuji or Pink Lady apples
10 strawberries
1 lime, peeled

GREENS 6
If you enjoy Thai food, you probably already know that lemongrass and cilantro were made for each other. Here, the pair blends beauti­fully with sweet honeydew, sweet kiwi, and mellow green spinach to round it all out. And lucky for you, cilantro is one of the premier herbs for detoxification and cleansing, especially of heavy metals, which makes it popular among health enthusiasts. In addition, it has traditionally been used for improving cholesterol and blood sugar levels.
MAKES 1 TO 2 (8-OUNCE) SERVINGS
Large handful of spinach
12 honeydew, rind removed
1 kiwi, peeled
2 lemongrass stalks
4 or 5 sprigs fresh cilantro, to taste

going for it

 If your dreams don't scare you, they're not big enough.

This has really resonated with me as of late. I have never been one to settle for something that doesn't make me truly happy. As fortunate I am to have a career, I know that this career is not what my heart truly wants. It's a sad and somewhat scary realization to have when you're 26 and paying bills and planning a wedding. It's also a sad thought that money plays such a huge role in the decisions we make.

The questions of
"What if I fail?
"What if I can't afford my rent?"
"What if it's the wrong decision?"
"What if it doesn't make me happy in the end?"

There are so many "what if's" when it comes to making a big decision. Change is terrifying. But what is scaring me the most right now is that

time isn't slowing down
I'm settling for a career because of financial stability
I am not reaching my full potential
I'm not chasing my dreams aggressively enough

Lotsa little fears that take little nibbles out of my brain...and honestly hurt my little heart.

I have always been a dreamer. Always.

I envision something and mentally obsess over it. What could be. What I could accomplish. What joy I would get out of truly following my heart. However, I never take big leaps to try and bring these visions to fruition. I've definitely taken small steps and I've been fortunate to have success. I've also been fortunate to have failed too. With successes, come failures. That's just the reality of it.

But what if...
I could succeed?

That is always a driving force. More so recently.
I've decided that life is way too short to not go after what you truly want. It's time to really chase my dreams and start taking leaps. I'm excited and I'm terrified at the same time.

But I'm ready..

What is better than a lesser ingredient meal that tastes delicious? Nothing that I am aware of. This Mozzarella, heirloom tomato, and basil pizza is just what I need when I don't have the energy to scrounge together a complicated dinner.

Ingredients

  • 12 ounces refrigerated fresh pizza dough
  • 1 cup fresh basil leaves
  • 6 garlic cloves
  • 3 tablespoons extra-virgin olive oil, divided
  • 4 ounces fresh mozzarella cheese, thinly sliced
  • 2 (6-ounce) heirloom tomatoes, cut into 1/4-inch-thick slices
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 teaspoon kosher salt 

Preparation

1. Place a pizza stone or heavy baking sheet in oven. Preheat oven to 500° (keep pizza stone or baking sheet in oven as it preheats).
2. Let dough stand at room temperature for 30 minutes.
3. Place basil, garlic, and 2 tablespoons oil in a mini food processor; pulse 3 times to form a paste. Add remaining 1 tablespoon oil; pulse until smooth.
4. Roll dough into a 14-inch circle on a floured surface; pierce entire surface liberally with a fork. Carefully remove pizza stone from oven. Arrange dough on pizza stone. Spread about 2 1/2 tablespoons basil mixture over dough. Top evenly with cheese, tomatoes, and pepper. Bake at 500° for 12 minutes or until crust is browned and crisp. Top with remaining 1 1/2 tablespoons basil mixture; sprinkle evenly with salt. Cut into 12 slices.

crapping on people's happiness


Am I the only one who is baffled by others who just feel the need to take a crap on people's happiness? Like it literally

blows 
my 
mind.

I see it allllll over social media. Twitter, Instagram, Facebook, blah blah blah. The outlets are endless, and people utilize the crap out of them. Thankfully, people I know are somewhat smart and considerate enough to keep their negative thoughts to themselves in person, but yet they somehow spew everything out on social media.

Why?

Does it make you feel better to type it out and share it with strangers? I mean I guess I get the same high from sharing positive thoughts and happy experiences. But to me, that's pretty standard. People like to share happy things, right?

I saw this blog post, "The 5 Most Annoying Facebook Posts About Being Engaged" (hate to even give it attention), but it straight up pissed me off. Maybe it's because I am engaged, but still. I think it is just another example of people taking their insecurities, jealousies, and straight-up grumpiness out on the keys of their keyboard.

I'm completely guilty of all 5 of these "most annoying posts" and I DGAF. I'm freaking thrilled to be marrying my best friend, which apparently is super annoying to even call him that. I guess I should be marrying some Joe-Shmo who doesn't support me, love me, and value me as a best friend would.

I've been through my share of messy, immature, used, unfortunately some abusive relationships. So, please excuuuse me that I am thrilled to have found "the one." I'm sorry (I ain't really) that I didn't become cynical and a non-believer in love and a destroyer of others' relationship happiness. Nope, I grew from it and found a far better relationship because I remained positive and happy for others.

And yes, I received a beautiful ring on that little finger and I will throw it up for photos as much as I damn well please.

The energy you put out is what you receive. I truly believe that.

It's not even just crapping on people who are engaged. It's crapping on people who get promotions because YOU'RE unhappy with YOUR job. It's crapping on other people's friendships because YOU'RE unhappy with how YOUR friends treat you. It's crapping on other people's days off because YOU have to work a double. It's crapping on other people's bodies because YOU'RE unhappy with yours, yet do nothing to change it. It's crapping on other people's ANYTHING because YOU are unhappy with yourself.

Let me tell you something...taking a dump on someone else's accomplishments, days off, bodies, engagements, friendships, relationships, jobs, etc...won't make YOUR life any better.

So...next time you feel like dropping a load, think about it.

With the weather heating up, sometimes you want a cold dish to eat. This dish by Food Network is refreshing, but filling. It also has a creamy peanut sauce. Not much better than that. So, here it is...

Cold Peanut-Sesame Noodles

Ingredients:

Kosher salt
12 ounces flat Chinese egg noodles
3/4 cup strong brewed green tea
1/3 cup natural peanut butter
1/4 cup soy sauce
1/4 cup rice vinegar (not seasoned)
3 tablespoons packed light brown sugar
1/4 cup roasted peanut oil
2 tablespoons toasted sesame seeds, plus more for topping
1 teaspoon chili-garlic sauce
1 teaspoon toasted sesame oil
1 1 -inch piece ginger, peeled
1 small clove garlic
2 carrots, finely grated
Chopped fresh cilantro and peanuts, for topping

Directions:

Bring a large pot of salted water to a boil. Add the noodles and cook as the label directs, then drain.

Meanwhile, make the sauce: Combine the green tea, peanut butter, soy sauce, vinegar, brown sugar and peanut oil in a blender. Add the sesame seeds, chili-garlic sauce, sesame oil, ginger, garlic and 1/4 teaspoon salt; process until smooth.

Toss the noodles with the peanut sauce and carrots in a large bowl. Chill about 1 hour. Top with cilantro, peanuts and more sesame seeds.
